Enping's Smooth Rice Noodles

Rice flour noodles are a special kind of food in Enping. The making of the noodles, from material selection to production, is a complex process. Rice flour dough is pressed through holes in a wooden trough over a large boiling pot and becomes long, tough, smooth and slippery noodles. At the Mid Autumn Festival, people in the northern area of Enping have rice noodles as staple food. Cooked briefly in boiling water, then sprayed with gravy, the noodles become a unique dish. If white sugar and liquor are added to it, it will have another unique flavor.
