Rice flour noodles are a special kind of food in Enping. During the process, the rice flour dough is pressed through holes in a wooden trough over a large boiling pot and becomes long, tough, smooth and slippery noodles. Cooked briefly in boiling water, then sprayed with gravy, the noodles become a unique dish. If white sugar and liquor are added to it, it will have another unique flavor.
